Banana Crepes with Lavender Blue Jam

What could get you out of the social isolation blues? This Banana crepe with Lavender Blueberry Jam will definitely get those endorphins pumping. All you need is this easy crepe recipe, a banana, and a jar of our Lavender Blue jam. Seriously, this is so easy and this meal will surely put a smile on your face. Enjoy!


Crepe recipe (courtesy of Alton Brown of Good Eats)

Prep time: 5 minutes

Inactive: 1 hr

Yield: 8 crepes


Ingredients:

2 large eggs

3/4 cup milk

1/2 cup water

1 cup flour

3 Tbl. melted butter for coating the pan


Directions:

In a blender, combine all of the ingredients and pulse for 10 seconds. Place the batter in the refrigerator for 1 hour to allow the bubbles to subside. (this will keep the crepes from tearing while cooking) The batter can keep up to 48 hours.


Heat a non-stick pan and coat with butter. Pour 1 ounce of batter in a spiral starting in the center. Cook for about 30 seconds and flip. Cook another 10 seconds. Move to a plate or cutting board.


Now add slices of banana


Drizzle Rare Berry Farm Lavender Blue Jam over the bananas


Roll the crepe and top with confectioner's sugar or whipped creme.
